Apricot and Oats Muffins

Here is the story. I was cleaning my kitchen shelves, and, suddenly, the sight of dried apricots at the corner provided me an epiphany.

“Voila!” I said to myself. And that is how I decided to make these gorgeous apricot muffins.

Look at this beautiful brown color. The crispy texture along with a wonderful crunch gave this muffin full marks in my baking diaries. Do you want to know the secret of this brown color?

I used my own blend of gluten-free flours such as – Ragi (Millet), Jowar (Sorghum), Tapioca flour, Besan (Chickpea flour), and amaranth.
