I absolutely love the stunning flavor of coconut. From savory dishes to desserts, coconut can be used in many ways.
It is amazingly versatile; its multifaceted personality in terms of coconut sugar, extra virgin coconut oil, coconut flour, coconut milk, coconut yogurt etc. makes it a unique ingredient in my cooking and baking diaries.
After mastering coconut muffins, when a friend of mine asked me to make a tea-time coconut cake, I was thrilled with the idea. Immediately, I made few notes, gathered the ingredients, and rushed into the kitchen.
The first attempt came just fantastic. The best part – all my neighbors’ kids loved it. The happiness I get by giving nutritious snacks to kids is beyond any comparison.
